Ingredients

Creme

  • Mascarpone250g
  • Heavy Cream200ml
  • Vanilla Bean - Split & Scraped1
  • Sugar - Optional

Coffee Soak

  • Strong Espresso (Cooled)200ml
  • Coffee Liqueur or Japanese Whiskey2tbsp
  • Sugar - Optional

Base

  • Madeleines10 piece(s)

Dusting

  • Cocoa Powder or Ceremonial Cacao

Method

Heavy Cream

Whip the heavy cream with vanilla seeds until soft peaks form. Fold in the mascarpone until the cream is smooth and airy.

coffee soak

Stir together the cooled espresso with your choice of coffee liqueur or Japanese whiskey. Add sugar, if you want more sweetness. Dip each madeleine quickly, and take it out as soon as it gets wet all around.

Assembly

Layer soaked madeleines, cover with cream and repeat. Dust with cocoa powder or ceremonial cacao nibs.
