Cook the condensed milk sous-vide or bain-marie at 80°C for 3 hours and let it cool slightly.
Cut the passion fruits in half and scoop out the pulp, blend very briefly to separate the pulp from the seeds and then fine strain to obtain a smooth juice.
Combine the passion fruit juice with the dulce de leche and blend until perfectly smooth.
Add the salt, mix, and adjust to taste.
Blend all ingredients until the sound of the ice cubes disappears completely and then fine strain into a chilled glass.
Garnish with a frozen raspberry.
Serve chilled and with side of frozen raspberries.
